Safe Food-Healthy Children                                  
Abstract:                                                   
This curriculum consists of four lessons/activity periods   
originally presented in a satellite teleconference (June,   
1994):  foodborne illness and the role of cleanliness in    
the childcare environment, handling food safely, handling   
food safely in special situations, and food safety in       
feeding infants. The lessons/activity periods are           
intended to be used with video segments, and include        
guidelines for pre/post test, handouts, activities, and     
wrap-up discussion. The materials include a food safety     
questionnaire, answer keys, activity sheets, fact sheets,   
glossary of food safety terms, and food safety audit        
sheets.
