Safe Food-Healthy Children Abstract: This curriculum consists of four lessons/activity periods originally presented in a satellite teleconference (June, 1994): foodborne illness and the role of cleanliness in the childcare environment, handling food safely, handling food safely in special situations, and food safety in feeding infants. The lessons/activity periods are intended to be used with video segments, and include guidelines for pre/post test, handouts, activities, and wrap-up discussion. The materials include a food safety questionnaire, answer keys, activity sheets, fact sheets, glossary of food safety terms, and food safety audit sheets.
I. Content A. Main emphasis of the materials: - Microbiological issues B. Content related to risk communications: - Understanding risks and issues related to bacteria, environmental concerns - Risk reduction strategies C. Content related to microbiological issues: - Scientific principles of food safety - Foodborne illness - Consideration of at-risk populations: children, immune deficient, pregnant women, elderly, other - Food preparation - childcare - Food storage
