Safe Food-It's up to You                                    
Abstract:                                                   
This module was designed for childcare providers to         
address how foodborne illnesses can be decreased in         
daycare centers or homes. The materials were designed for   
two delivery systems:  1) direct teaching by extension      
professionals or 2) self-study by childcare providers. A    
23-minute videotape, "Learn Your Food Safety IQ",           
accompanies the plans for seven mini-lessons with           
overhead masters, posters, and resources. Mini-workshop     
lessons are food poisoning, bacteria are hitchhikers,       
bacteria-how they grow, put bacteria on hold with heat      
and cold, take good care of my baby, picnic safely, those   
pesky pests. The curriculum includes a 23-minute            
videotape, transparencies, handouts, lesson plans, and      
camera-ready masters.                                       

I. Content

food issues                                                 
 B. Content related to risk communications:                 
  - Understanding risks and issues related to bacteria,     
environmental concerns                                      
  - Risk reduction strategies                               
 C. Content related to microbiological issues:              
  - Scientific principles of food safety                    
  - Foodborne illness                                       
  - Consideration of at-risk populations:  children         
  - Food purchasing considerations                          
  - Food preparation at school, childcare facilities        
  - Food storage                                            

II. The curriculum addresses the following food related     
risk educational goals:                                     
 A. Reduce the risk of foodborne illness                    
 B. Improve consumer understanding of food related risks    

III. Format                                                 
 - Number of lessons in curriculum - 7                      
 - Length of each lesson, time required - 30 minutes        
 - Target audience is daycare providers                     
 - Materials are applicable to diverse audiences            
 - Materials are available in English                       
 - Facilitator materials include background information,    
goals and objectives, lesson plans/scripts, camera-ready    
masters                                                     
 - Learner materials format: fact sheet, handout, poster,   
overhead transparencies, video(Vis. 1)

instructor-led settings                                     
 - Production qualities include text written in active      
voice, graphics immediately identifiable and relevant to    
content and reader.
