Applesauce-Cinnamon Corn Muffins 
MSUE Family Nutrition Program, Grand Traverse/Leelanau Counties 

2-1/2 cups cornmeal mix 
1 teaspoon cinnamon 
1 cup applesauce 
1/3 cup milk 
1 egg 

1. Preheat over to 400ºF. 
2. Mix cinnamon, applesauce, milk, and egg. 
3. Add cornmeal all at once; stir until just moistened. 
4. Fill prepared muffin cups 3/4 full. 
5. Bake 15 to 20 minutes or until golden brown.
